Convective Heat Transfer

Convection is the thermal transfer that occurs inside the liquid, mix one part liquid with another. Convective heat transfer can be classified according to the nature of the flow. When a thread is caused by a mechanical or external means such as a fan, pump, or atmospheric pressure, wind, it is called a forced convection. On the other hand, for natural (free) convection flow caused by the buoyancy force of fluid that arise from density variations caused by temperature variations in the liquid. For example, when the hot food product is exposed to the atmosphere, natural convection occurs, while in cold-storage forced convection heat transfer occurs between the flow of air and food products subject to this thread.

Heat transfer through solid objects to conduct alone, while the transfer of heat from the surface of a rigid body in a fluid or gas is partly due to the heat and partly convection. Whenever there is a noticeable movement of a liquid or gas, conductive heat transfer in a liquid or gas is negligible compared with the transfer of heat by convection.

However, there is always a thin boundary layer of the liquid on the surface, and through that thin film heat transfer by conduction. Convective heat transfer arising in fluid, due to the combined effects of conduction and the mass movement of liquid. As a rule, in the heat, which is transferred is reasonable, or internal, thermal fluid. However, there is a convection processes for which there is also the latent heat exchange, which is generally associated with the phase change between the liquid and vapor States fluid.
