Plate evaporators for freezing
Plate evaporators are formed lining of tubular spring with sheet metal, welding together two embossed plate, or extruded aluminium. Advanced flat face, can be used for cooling air for cooling fluid immersed in the vessel, or as Baudelot cooler, but is mostly used for flat plate evaporators for cooling solid product from the heat, the product is formed in rectangular packages and held close between a pair of adjacent plates.
In a horizontal flat plate with a freezer (Fig. 7.14(a)), the plates are arranged in a stack on the slides, so the intermediate spaces can be opened and closed. Trays, boxes or cartons product loaded between the plates and the stack is closed to give good contact with both sides. If necessary, a full cooling plates are open, and the product will be deleted.
